My Favorite Ginger Tea Bread

Oh, how I love this bread.  It’s one of my favorite things!  It’s like a sweet, gooey bite of Autumn – the perfect accompaniment to a cup of hot tea (or cocoa) on a chilly night.  (Preferably snuggled up by toasty fire, if you can swing it.)  This is a dense, rich loaf that is more cake-like than bready.  Similar to gingerbread in flavor, but a totally different texture.  You really should try it, and I hope you enjoy it as much as I do!

Ginger Tea Bread

Preheat oven to 350 degrees

Ingredients:

2 3/4 C. flour
2 tsp. baking powder
1tsp. baking soda
4 tsp. ground ginger (don’t skimp)
2 tsp. ground cinnamon
1 tsp. allspice
1 tsp. cloves
1 C. softened butter
1 C. sugar (white or brown)
2 eggs
1 C. molasses
1 C. boiling water

Sift together all dry ingredients (flour, baking powder, baking soda, ground ginger, cinnamon, allspice, ground cloves.)  In a separate bowl, cream together butter and sugar.  Add eggs and beat until fluffy.  Add sifted dry ingredients to the butter mixture and mix well.  Dump in the boiling water and molasses and stir just until the batter is smooth and even.   Pour batter into well greased loaf or mini-loaf pans, or use disposable loaf liners for easy gifting.  Do not over-fill!  Bake at 350 degrees for about 45 minutes for full-sized loaves, less for mini loaves.  Let cool completely before slicing.

*The loaves puff up then deflate quite a bit, but don’t let that scare you.  Also, the outer top will be crusty at first.  After the loaves cools, put into a zip lock bag for a few hours (or overnight) and it will all become soft and gooey.  I think it’s even better the next day after the spices really mellow together!

    I came across this page a few days ago while searching for a cupcake recipe. My mother-in-law and I love ginger, so I thought this would be perfect to have as a dessert on Christmas day. I’m not really a baker, but this recipe is simple and definitely yummy. After fighting the crowd at the supermarket, I realized that I forgot the key ingredient–ginger powder!!! I ended up substituting it with crystallized ginger chips and it turned out pretty well. It added some “marbling” effect and you get a bit of real ginger here and there. I was worried that adding the chips to the batter won’t be “gingery” enough, so I sprinkled some on top as well! Needless to say, it was a hit, even to my husband (who usually prefers cupcakes!) I tried it with mint green tea (from Lupicia) and it was a perfect combination. Thanks so much for sharing one of your favorite recipes!!!
