Cookie Doh!

I discovered the secret to stress-free cookie dough rolling a few years ago and it changed my life!  OK, maybe that’s an exaggeration, but it’s still a pretty darn, cool trick and I want to make sure everyone knows about it.  I originally found this technique in my beloved copy of Joy Of Cooking.  It’s so simple, yet solves so many problems:

  • dough doesn’t stick to anything, ever
  • cut your fridge chill-time by at least half
  • no extra flour incorporated into the dough, means the cookies are tastier
  • intricate or detailed cookie edges are crisp and clean
  • makes cookie cutting much easier for kids
  • counter and rolling pin stay squeaky clean
  • enables you to roll the dough as thin as you like

I though this technique would be most easily explained by video, so here you go!  (I’m sure many of you are already hip to this trick, but for those of you who aren’t – this is gonna blow your mind.  You can thank me later.)

    Your bacon cutter is just perfect. I’ve got one of those do it yourself kits, and can not for the life of me get it to work – can you do a vido tutorial of that – pretty pretty please!!

    Try using parchment paper on the cookie sheet. I can make tray after tray of gingerbread cookies reusing the parchment paper. You can place cut out cookies on the paper while waiting for a sheet to cool as well. Moves things along.

    I also use this wax paper technique for pie dough.

    I had heard about using waxed paper or parchment paper to roll your dough, but I didn’t know to peel the dough off both sheets of paper before using the cookie cutters. It makes such a difference in sticking! Thanks for the video.
